Meal Plan Like a Boss - 6th March

The last 6 weeks have been a bit of a disaster food-wise. I just stopped planning, I got busy and let that be an excuse to not bother, to order take away, to just eat toast. I am not a very good adult sometimes. I honestly feel that typing it all out here helps me feel together and like I appear to know what I am doing sometimes. So while I know these posts aren't that interesting to most, they are more for me and my rubbish adult brain.

I also feel in a weird limbo between winter and spring, where I have no clue what I want to eat anymore. Cottage pie and stuff with gravy just doesn't interest me, but salads seem dull. I am on the look out for interesting food/meal ideas, so please share any tried and tested family favourites!

Leftover roast chicken gnocchi with pesto and rocket.

Quorn chilli con carne with brown rice and roasted kale

Chicken and chickpea curry.

Prawn spaghetti carbonara

It is our anniversary so we are off out for a meal.

My Aldi shop came to £43 this week.

What is everyone else eating this week? Don't forget you can grab my free PRINTABLE MEAL PLANNER over on last week's Meal Plan Like a Boss post.

What's on your meal plan this week?

  1. Hari om
Totally understand that 'between shifts' divide...for me it is the continental shift betwee avocado and cucumber salads to Scottish stodge. I got father to try my stir fry the othet day and he actually liked it... asparagus and long-stem broccoli diced and stirred with black pepper and lemon juice; made a satay sauce with 2 tblsp cruncy pnut butter, 1 tsp mild curry pwdr, 1 tsp vege stock pwdr, 1 tsp dark soy sauce and enough water to thin to prefference, stirred to boiling in the frying pan after the veges. All served with lime and coriander rice - the packet kind! It was quick, easy, warming like winter, but light like summer!!!

4give typos - still on the tablet... home to Dunoon tomorrow at last 😄 YAM xx

  2. Oh your meal plan sounds delicious! I love the sound of Monday nights dinner! Good Food magazine has some amazing recipe ideas for this month if you haven't seen it yet! I always find loads of inspiration for my meal plans in there :)

    Rachael xx.

  3. We always seem to have Pesto chicken on a Monday! Not tonight though (we're off out - woohoo) x

  4. I am enjoying hot salads at the moment. Leeks instead of spring onions, red peppers, sprouts instead of lettuce, feta cheese, artichoke, whatever you like - diced, warmed or roasted :) yum yum yum.
