Meal Planning Monday - 10th October


A delicious roasted cauliflower frittata I made last week

I have been following weight watchers for 1 weeks now, and its been just over 3 weeks since I weighed myself and decided to start eating better. In those 3 weeks I have lost 13lbs - which I am pretty chuffed with. It feels good to be in control again but still eat the things that I enjoy, and include the occasional treat.

With Christmas fast approaching, as well as Zoe's second birthday I am in full on frugal mode - So we are trying to cut costs where possible. So, lots of leftovers and less eating out.

Monday
Breakfast: Porridge with skimmed milk and banana
Lunch: tin of Soup
Dinner: Chicken Risotto

Tuesday
Breakfast: Coffee and fruit
Lunch: Left over risotto
Dinner: Tuna Pasta Bake

Wednesday
Breakfast: Porridge with skimmed milk and banana
Lunch: leftover pasta bake
Dinner: Salmon egg fried rice

Thursday
Breakfast: Coffee & fruit
Lunch: leftover fried rice
Dinner: Bangers and mash (need to work out the sp in the sausages)

Friday
Breakfast: Porridge with skimmed milk and banana
Lunch: Not sure what our plans are - possibly a picnic when out and about.
Dinner: Homemade Cottage Pie with turnip and carrot
