Meal Planning Monday - 4th April

Last week was a really fun one, we had family up so did a lot of eating out and about, and it was a bit of a 'fly by the seat of our pants' type week. While I enjoyed it and we did have some home-cooked food, I am looking forward to getting back into a routine. I am attempting to stop eating so much rubbish this week, I have basically been a hormonal rubbish bin for the last month and it needs to stop. I am off running tonight for the first time in about 7 months! Wish me luck.

I did the weekly shop on Friday last week, and took advantage of some good deals in Aldi. I got our weekly usual essentials, as well as stocking the freezer with extra meat for under £40.

Monday Jacket potatoes with tuna and salad - quick and easy post work/run meal.

Tuesday King prawn and pesto pasta - still a firm favourite.

Wednesday Spaghetti and meatballs - I got some venison meatballs in Aldi to try, I also got some courgette so I may sub some of the pasta in mine for courgette ribbons (I don't have a fancy sprialising gadget).

Thursday Thai green chicken curry with rice (made the same as my vegan curry, but with meat instead of chickpeas, and thai green paste instead of korma)

Friday Homemade pizza night! I'll be blogging my super easy dough recipe soon, going to load mine with veggies and use low fat mozzerella.

For lunches, I am determined to save money, so lots of leftovers, soup and homemade sandwiches. Me and Zoe are also loving hummus and veggies to dip at the moment for snacks, trying to avoid the biscuit tin where possible.

Quite a standard week for us, what is everyone else eating this week? Always on the hunt for new recipe ideas.
