Meal Planning Monday - 12th August

It's Monday so its time for some serious meal planning. I have been all over the place recently, I don't know if its the weather or just a general summer apathy to organisation but I feel like I haven't cooked a proper meal in weeks! I have eaten out a lot, ordered in an awful lot and eaten many bowls of cereal for dinner. Not good.

I feel like I start all my meal plans saying this but here is me trying to get back on the straight and narrow.

Pasta bake with Swedish-style meatballs.

Quorn Chilli with brown rice (or possibly enchiladas depending on which we fancy)

Chicken thighs with sweet potato mash (or roasted) and brocolli

My Healthy Carbonara with bacon and asparagus.

Sweet chilli salmon fillet with homemade oven chips and salad.

I am making a bit of a pledge not to buy lunch too much as I have been hammering M&S for the past few weeks. So I have stocked up on salad items, bread and sandwich things, soups etc... I have also bought some snacky bits to keep in my desk drawer, healthy things to try to keep me away from the naughty office cakes and biscuits.

I was sent some Katy's Kettle Corn flavour pop chips last week so I have shoved them all in my desk drawer. They are a great mid-morning snack as they taste a bit like crunchy nut cornflakes! Plus as 128 calories a bag its better than the cake or danish alternatives.

How do you resist temptation in the office?

  1. When I worked in an office having a canteen on the same floor was lethal! Chicken mayo sandwiches were a fav.

    1. It is so easy to fall into the cake/biscuit/canteen sandwich trap. I need to get my butt in gear and be more organised.

If there's anywhere I'm going to fall off the wagon it's the office, especially when it seems to be somebody's birthday/leaving every other week and so the kitchen is always full of tasty treats! Like you I always try and have some low calorie treats / fruit on hand, my current 'thing' is Metcalfe's skinny popcorn, you get a massive bag and it's less than 100 calories!

    1. LOVE popcorn. I am in love with the M&S salty & sweet one, its only 2pp a bag and helps me say no to cake.

  4. I'm hopeless at resisting office based temptation - and we always seem to have a supply of biscuits or cakes appearing in the kitchen! I think your strategy, of having healthier stuff to hand, is a good one.

    The rest of the meal plan sounds yummy, by the way!
