This weeks weekly bake off cake is Mary Berry's very best chocolate fudge cake, it has a rather ambitious name, does it live up to it?
Very best chocolate fudge cake
For the sponge
50g sifted cocoa powder
6 tbsp boiling water
3 large eggs
50ml milk
175g self raising flour
1 tsp baking powder
100g butter (softened)
275g caster sugar

150g dark chocolate
150ml sour cream
0.5 tsp instant coffee

Yet another Mary Berry all-in-one cake, I am still not sure if I like this method. It may be easier and less time consuming, but I don't know if it produces the best cake in the long run.
Start by blending the cocoa powder and boiling water and allow to cool slightly. Then add all the other cake ingredients and blend until it forms a thick batter.
Measure equally between two sandwich tins and bake for 20-25 minutes at 180.
For the icing I melted the chocolate in the microwave and slowly stirred in the instant coffee, I find it really brings out the chocolatey flavour without being over poweringly coffee-y. Then stir in the sour cream.
Leave the icing to cool and thicken to the point of setting, then once the cake is cool spread the icing in the middle and over the top of the cake.
This recipe was yummy, not sure it is the "best" chocolate cake I have ever made, but it is definitely an easy recipe to follow.

I'm having serious chocolate cake cravings now! I must admit that I'm not fully convinced by all-in-one techniques either but I wouldn't like to argue with Mary Berry!
