Weekly Bake-off challenge one: Carrot cake with mascarpone topping.

I heard about a great weekly bake-off challenge on twitter, It seemed the like the perfect way to get over the eventual heartache that will come once the Great British Bake Off is finished. *sobs*
Although I have heard rumours of a possible celebrity bake off! Which I am pretty excited about. Who do you think they will get as contestants?

Anywhoo back to the weekly bake-off...

The challenge is based around the book Mary Berry's '100 Cakes and Bakes'. Every Monday a new recipe will be chosen from this wonderful book and announced on twitter, facebook and the blog.

The first recipe was for a carrot cake with mascarpone topping. When I finally got around to baking I realised I didn't have some of the ingredients needed, so I made a sort of adaptation. I used sultanas instead of walnuts and a lime and almond glaze rather than the cream cheese frosting. I also didn't have any bananas, so just added a bit more carrot and hoped for the best.

I made it into a tray bake rather than a round cake, as it will be easier for me to share the love out among friends and co-workers. (Thinking mainly of my waistline)

The cake is actually really nice, light and flavourful. It is a little on the dry side, but I think that is probably due to the lack of banana. Next time I make it I will definitely try the mascarpone icing, but overall the cake went down a storm!
