Banana Bread Huzzah! (part two)

So here is the recipe, for those who want to make it properly!


Unsalted butter for greasing
225g Self raising flour
150g of demerara sugar
Pinch of salt
Half a teaspoon of cinnamon
Half a teaspoon of nutmeg
2 large over-ripe bananas
175ml of orange juice
2 eggs (beaten)

1. Preheat the oven to 180C/350F/ Gas mark 4 and lightly grease and line a 2lb loaf tin.

2. sift the salt, flour, sugar and spices into a large mixing bowl

3. in a separate bowl mash the bananas with the orange juice then stir in the eggs, pour into the dry ingredients and mix well.

4. Spoon mixture into loaf tin and bake for 1 hour.

This loaf should serve 8 regular people or one of me! Ha!
