Ok, so i woke up this morning around 8am with an overwhelming desire to bake! i had a browse around Bakespace and my various cookbooks and decided to try Chocolate Chip Cookies!
or as i called mine, Chocolate Chip Cakies! as they turned out quite cake like! although thanks to DD at bakespace, i found out that if i use baking soda rather than powder they will be less cakey! watch this space
Believe it or not i have never tried to make cookies before! my first try went ok i guess, although im not sure the texture was quite right.
one good thing about baking cookies so early in the morning is that it made the house smell amazing!
Heres the recipe i followed:
175g Plain flour
1tbsp baking powder
125g butter or marg (room temp)
85g muscavado or brown suger
55g caster sugar
125g chocolate chips
I basically just threw the ingredients in a bowl and mixed.
i then dolloped small blobs of the mixture on a baking sheet, and away it goes!
my first batch my cookies were very big and spread like wildfire! so the second batch i made them slightly smaller, although taste wise the bigger ones remained softer in the middle!
im definalty going to try this again, maybe with a few extras, nuts, honey, maybe even M&M's!!
Im definatly going to practice and practice until i get this right!
Heres a close up of the inside of the cookies, they were quite light, i think i need to check on bakespace for the secret of dense and chewy cookies!!

These we suggested to me by Bob! check out his blog!
basically i had some new potatoes in the cupboard and didnt just want plain old boring boiled potatoes, so i reached out to my wonderful Bakespace buds who suggested this!
Here is a pic of them before they were put in the oven...and after.
I boiled the potatoes till they were fully cooked,
then i layed them on a baking sheet and drizzled with olive oil, salt and pepper,
and now for the fun part!
i grabbed a potatoes mashed and squished the potatoes, not completely mashed, just smooshed a little!
at this point in the future i'd probably add some cheese or maybe some bacon?
i just shoved them in the oven for around 20 mins and they came out like this...i served them with some pork chops.
Lemon Meringue Pie
I got this recipe from a book called 'Baking Day'
I really wanted to try my hand at pastry, as i'd never tried to make it from scratch before. i'd also never attemped meringue either!
This recipe was super easy to follow and the pie turned out really good!
I may need to work on my presentation, but it tasted phenomenal!!
one stage that i found pretty tricky was adding the water to the cornflour! its the oddest thing, i goes hard! it took me a couple of attempts to get the consistency right.
the lemon filling did come out quite runny, it tasted amazing but next time i might change the amount of cornflour, or the boiling time to make it a thicker consistency.
although i think if i'd let it cool slightly before tucking in, it might have thicken up on its own! i was just too impatient!
I was amazingly proud of myself for getting this right! it has boosted my pastry confidence! next on my list to try is a tradtional apple pie and a pumpkin pie!
