Lemon Meringue Pie
I got this recipe from a book called 'Baking Day'
I really wanted to try my hand at pastry, as i'd never tried to make it from scratch before. i'd also never attemped meringue either!
This recipe was super easy to follow and the pie turned out really good!
I may need to work on my presentation, but it tasted phenomenal!!
one stage that i found pretty tricky was adding the water to the cornflour! its the oddest thing, i goes hard! it took me a couple of attempts to get the consistency right.
the lemon filling did come out quite runny, it tasted amazing but next time i might change the amount of cornflour, or the boiling time to make it a thicker consistency.
although i think if i'd let it cool slightly before tucking in, it might have thicken up on its own! i was just too impatient!
I was amazingly proud of myself for getting this right! it has boosted my pastry confidence! next on my list to try is a tradtional apple pie and a pumpkin pie!
